Grilled Gourmet Grilled Cheese

How about some summer comfort food?  Use your grill and create an easy cheesy light meal option.

Gourmet Grilled Cheese

Serves: 4       Total Time: 20 Minutes

INGREDIENTS

  • 8 slices of your favorite bread
  • 1 cup shredded or sliced gruyere cheese
  • ½ cup shredded or sliced sharp cheddar cheese
  • ½ cup shredded or sliced mozzarella cheese
  • ¼ cup of mayonnaise
  • ¼ cup butter, softened
  • 1 tsp. chopped rosemary
  • 1 tsp. dried oregano
  • 1 clove garlic, grated

DIRECTIONS

Step 1
Preheat your grill to 425°F.
Step 2
In a bowl, combine the butter, rosemary, oregano, and garlic.
Step 3
Spread the inside of one slice of bread with mayonnaise. Top the mayo with enough of all three cheeses to thickly cover the slice of bread edge to edge. Place the second slice of bread on top. (Preferably book matched) Butter the outside of both sides of the sandwich and then place it into the Napoleon Flexible Grill Basket. Repeat with the remaining slices of bread.
Step 4
Close the basket and place it over direct heat, ensuring the handles are resting across the cooking grids. This makes sure that the basket is raised above the cooking grids. This allows the sandwiches to slowly crisp while the filling melts.
Step 5
After about five minutes, the bottoms of the sandwiches should be golden-crisp. Use Heat Resistant Gloves to flip the basket and allow the other side to cook.
Step 6
Serve with sliced veggies, a hearty salad or one of our delicious homemade soups for a healthy and filling meal.
